Allergens (ELISA) - molluscs
Quantitative determination of mollusc protein (tropomyosin) in food products with the ELISA method. The results of the analysis are often used to support allergen labeling by EU regulations.
Molluscs and mollusc products are listed in Annex II of Regulation (EU) No 1169/2011 as substances or products causing allergies or intolerances. If they are used to manufacture or prepare food, they must be emphasized in the list of ingredients. It is also recommended to indicate the possibility of unintentional contamination with molluscs, where appropriate.
While food allergen testing is the most common application, this analysis can also be performed on feed, supplements, cosmetics, and environmental samples.
