Quantitative determination of crustacean tropomyosin in food and other samples with ELISA (enzyme-linked immunosorbent assay).
As they are known allergens, the presence of crustaceans and crustacean products in food sold in the EU must be indicated and emphasized in the list of ingredients. It is also recommended to declare the possibility of unintentional contamination.
